Special Tasting Series: Texture & Taste

A evening to compare and contrast some specially selected whiskey with some hand crafted chocolate.

Our Special Tasting Series continues with Taste & Texture a Whiskey & Chocolate pairing of specially selected Irish Whiskey and hand crafted chocolate. With flavours and aromas to the fore join us for a mid-month society event to explore how whiskey and chocolate can compare, contrast and combine. Andrew Rooney from Dublin Whiskey Tours will be our guide on the night, joined by Kelli & Patrick Marjolet from the Proper Chocolate Company.


Andrew has run Dublin Whiskey Tours for over 3 years and has been pairing cheese, chocolate and whiskey for over 2 years. He has found combinations that work really well and he will explore the best ways to enjoy whiskey and chocolate together.  From very basic taste blocks like cocoa and barley, we will explore a world of taste combinations.

There will be five specially selected whiskeys to go along with 5 different chocolate bars. On the night Andrew will lead the society through 3 pairings with the last 2 pairings to be an exploration of taste for our members to discover and decide which they prefer. Patrick will also be on hand to talk us though the specially sourced cocoa beans used in each bar and some of the other bespoke ingredients used.

To compare, contrast and combine with five different chocolate expressions from Proper Chocolate a line up of specially selected Irish Whiskey has been researched and chosen:

Powers 15 Year Old Single Cask (Powers Online Exclusive Release 2019)
A single cask Powers Pot Still laid down in February 2003 and matured for 15 years. It was bottled in April 2018 at 46% ABV and non-chill filtered.

Writers Tears Founder's Reserve Florio Marsala Edition (2017 Release)
A limited release in 2017, small batch blend with 70% Single Malt and 30% Single Pot Still. Finished for a minimum 12 months in Marsala Hogsheads from the Florio winery in Sicily and bottled at 46% ABV and non-chill filtered.

Teeling Single Grain
This Single Grain bottling has been winning awards since its release. It is fully matured using Cabernet Sauvignon casks from the Napa Valley California. It is bottled at 46% ABV with no chill filtration.

Tipperary Single Malt Single Cask Red Wine Finish
This Single Malt spent almost 11 years in a Sherry Butt before being finished in barrel previously used to age Rioja wine at the Bodegas Faustino. This is bottled at cask strength with an ABV of 58.5%.

Kilbeggan Small Batch Rye
A unique Irish whiskey featuring around 30% rye alongside malt and barley this limited release from 2018 was distilled and matured at Kilbeggan Distillery and bottled at 43% ABV.
