From Aqua Vitea to Whiskey

25th May 2023, Wynn's Hotel, Dublin 1.

This month Chris Hennessy will take us on a journey through the history of whiskey!  


Our little rock has been inhabited with a grá for Spirits in all different shapes & sizes that have truly impacted our Irish whiskey culture throughout the centuries. Join us for a deep dive into the history of Ireland from the 14th century through to present day, with plenty of tipples along the way.

Each chapter of the narrative will be represented with a modern day example of how each moment of Irish history shaped how we drink & experience Irish whiskey today.

Tasting will include: 

  • 1300s - Aqua Vitae

A recreation of the original 'aqua vitae' & the botanicals in behind the medicinal recipe.


  • 1350s - Nectar

Recreation of Nectar, a medieval sourced wine punch to showcase the evolution of wine & sourced spices from 5th C. Greek hypocras, to Nectar in Ireland 1350/1, to mulled wine present day. 

  • 1500s - Rum

Trade was ripe on Irish shores with the arrival of rum, fortified wines & foreign spirits through our ports. Rum was at the forefront of our distribution industry & this overproof Copeland distillery re-casked Barbados rum embodies the category. 

  • 1400-1600s - Poitín

From provincial (rural) distillate techniques to modern day 'clean' distillation, Killowen Pangur showcases peated grains of Killowen distillery verses Great Northern distillery malted grains. 

  • 1800s Silent spirit

George Roe's favourite conversational topic, what is viewed today as one of the world's most unique whiskey category, our single grains can stand tall amongst the malts, blends & pot still. WD O'Connells 10yo single grain rye & bourbon cask embellishs this category. 

  • 1860s Gladstone Act

Ireland once was a haven for bonders & merchants, receiving casks of Irish whiskey & choosing how to vat or re-cask themselves. In modern day Ireland, we'll be indulging in a Moscatel lead Liberator malt, which is vatted under bond & sitting at its natural unadulterated cask strength. 

  • 1960s Grain for Gold

With the islands distilleries on their knees, embracing Grain distillation in the form of blends 'diluting' signature malt & pot still brands became the saviour of our industry. Here we've got a treat of an old school (early 70s Italian import) Power's Gold Label.
