Still With Us:
The Once and Future Pot Still
31th August 2023, Wynn's Hotel, Dublin 1
Dear to the palates of many of our members, Single Pot Still whiskey has had an alternately troubled and triumphant history.
Once the defining style of Victorian Irish distilling, over the twentieth century its expressions dwindled to two lone offerings only to witness an equally astonishing revival in the past ten years. Today, as its GI definition undergoes pivotal legislative review, we've decided to take a long look back at where the drink has come from, where it's going, and what might be learned from the past along the way.
From silent distilleries through a range of iconic Midleton single casks to the revived and experimental mashes of a changing category, pot-stillophile Fionnán O'Connor and a panel of invitees will lead us through a range of classics and cask pulls in an honest look back and an exciting look forward at the once and future drink.
It is our pleasure to welcome Palace Bar publican Willie Aherne, Boann Distillery's Peter Cooney, Two Stacks' Shane McCarthy, and IWA chairman and Sliabh Liag founder James Doherty in what will undoubtedly be a memorable night in society lore.
