The Irish Whiskey Society – Dingle Chapter invites you to a truly special celebratory evening!
Join us at An Bothar Pub in Cuas, Dingle for an evening marking two major milestones: the 10-year anniversary of the Dingle Chapter and the 1-year open anniversary of The Dingle Butcher.
To celebrate, we’re hosting a curated whiskey tasting paired with exceptional dishes from The Dingle Butcher. The evening will be hosted by Paul Malcolm and Ellen Campbell, whose years of experience as chefs, instructors, and butchers promise pairings crafted with skill, passion, and deep knowledge of flavour.
The whiskey lineup will be something truly special — including the brand-new release from Dick Macks and some bottles which probably haven't been tasted by our members for some time, if ever. Each pour reflects the dedication, patience, and craftsmanship of Ireland’s finest distillers, just as every cut and creation from The Dingle Butcher showcases quality sourcing, with local products, expert preparation, and respect for the craft of butchery.
Expect bold drams, exciting discoveries, and expertly matched dishes that highlight true craftsmanship in both the glass and on the plate.
This will be the first time that we will have hosted a tasting at this establishment but we are very excited to do so, the views are just breathtaking. On this occasion, there will be 2 buses provided, this time leaving John Benny's pub & restaurant, Strand Street firstly at 6.30pm and then again at 7pm. and returning to the town later after the tasting. It is up to each and every member to ensure that they are at the meeting point on time. Our advice is to try to be at John Bennys for 6.30 pm and if there is not enough room on the first bus then there will be on the second one. If not enough attendees do not show up for the first bus and there are too many of you for the second bus then the stragglers will have to organise your own way over to An Bothar. The bus will NOT make a third journey.

We are delighted to announce our March End of Month tasting, which will feature a very interesting lineup of hand selected, cask strength bottlings from Roaming Road Spirits, all presented by Mike Gilmore!
Roaming Road Spirits was founded by Mike Gilmore, a Wyoming native with almost two decades experience in the premium spirits industry. From humble beginnings in his retail liquor store to forging deep connections across distilleries and rickhouses in Kentucky, Indiana, and Europe, Mike built a reputation as a curator of exceptional spirits. In 2023, Mike conceived a groundbreaking vision: to create a global portfolio of single cask, cask-strength releases, carefully sourced from the world’s most iconic regions and brought together under one brand.
For our tasting, he has selected seven unique spirits, which explore the differences that can come from different producers or different Mashbills. Coupled with Mike's experience and careful curation of whiskeys, this has resulted in some really unique liquid you can't find anywhere else! These are all cask strength spirits, so expect big, bold flavours and plenty of interesting conversation.

Booking opens on Monday the 9th of March at 7.00 pm. There are spaces available for offline and online tastings. Please make sure to choose the right ticket type. Join the waiting list to be notified as we might be able to get more spots for the event. It is necessary to register and complete payment via Stripe (within 15 minutes) to secure your booking.
9-10th of May, Donegal

Your Committee has been hard at work planning a spectacular weekend away for May 2026. We are heading north to the rugged beauty of Donegal for a deep dive into the heritage and future of whiskey-making in the region.
Before we finalise the details, we want to gauge interest for a two-day distillery tour on May 9th and 10th.
Saturday, May 9th We will leave Dublin at 10 a.m. & visit the historic Crolly Distillery. Nestled in the Donegal Gaeltacht, Crolly is reviving a century-old tradition. After the tour we will organise a dinner in “Leo's Tavern”, the home of music artists Clannad, Enya and Moya Brennan.
Sunday, May 10th. Breakfast at the hotel and transfer to Ardara to explore the craftsmanship behind the Sliabh Liag Distillers.
Return to Dublin around 5 p.m.
Transport: A dedicated Society bus will be organised for the weekend.
Society Trip Fee: Approx. €50 per person (covers the bus and tours).
Accommodation: Members will book their own rooms. Upon registration of interest, we will provide a recommended hotel where the group will be based (we have room options from 1 to 3 people. The room rates are from 169 (1 person) to 249 (3 people)).
