This February, we invite you to join us for an in-depth exploration of Galway’s Micil Distillery, guided by Head Distiller Jimín O’Griallais.
Micil is named after Micil Mac Chearra, the great-great-great-grandfather of Pádriac & Jimín, who began distilling along the shores of Galway Bay in 1848.
Today, Micil is the first legal distillery in Galway in over a century, carrying forward a six-generation family distilling tradition through a modern small still approach rooted in poitín making.
This tasting will focus on Micil’s distinctive spirit character, shaped by small still distillation, peat influence, and a deep connection to place, from Connemara to Galway City. Jimín will lead members through the range, sharing the practical and historical thinking behind each release.
On the night, members will taste:

• Micil Heritage Poitín
• Release 1: Micil Peated Single Malt
• Release 2: Micil Peated Heritage Whiskey
• Release 3: Micil’s upcoming release for 2026

• A special Micil cask pull
This will mark the first opportunity to taste Micil’s Galway Whiskey Trilogy together at a public tasting, showcasing the distillery’s inaugural whiskey releases and the three styles distilled in Galway.

The Irish Whiskey Society – Dingle Chapter invites you to a truly special celebratory evening!
Join us at An Bothar Pub in Cuas, Dingle for an evening marking two major milestones: the 10-year anniversary of the Dingle Chapter and the 1-year open anniversary of The Dingle Butcher.
To celebrate, we’re hosting a curated whiskey tasting paired with exceptional dishes from The Dingle Butcher. The evening will be hosted by Paul Malcolm and Ellen Campbell, whose years of experience as chefs, instructors, and butchers promise pairings crafted with skill, passion, and deep knowledge of flavour.
The whiskey lineup will be something truly special — including the brand-new release from Dick Macks and some bottles which probably haven't been tasted by our members for some time, if ever. Each pour reflects the dedication, patience, and craftsmanship of Ireland’s finest distillers, just as every cut and creation from The Dingle Butcher showcases quality sourcing, with local products, expert preparation, and respect for the craft of butchery.
Expect bold drams, exciting discoveries, and expertly matched dishes that highlight true craftsmanship in both the glass and on the plate.
This will be the first time that we will have hosted a tasting at this establishment but we are very excited to do so, the views are just breathtaking. As usual, there will be a bus provided and this will depart from John Benny's Pub & Restaurant at 6.45 pm.
